If the spike has turned brown then cut it to about a inch of the plant stem. If you look carefully at the flower spike you will notice a small node at intervals up the stem. That is where flowers come from. Some people cut the stem back just above the node below the last flower and the plant will sometimes put out another smaller spike of flowers. That is ok but really I and many others feel that it will not allow the plant to build strength for the next season of blooms. So I would suggest that if the flowers on the one remaining stem are several weeks old Cut the stem, put it in water and enjoy. Then just tend to the plants needs and wait for the next spike to grow from the base of the plant. Oh and welcome to the wonderful and exciting world of orchids.
